  • 1 tablespoon lemon juice
  • A handful of fresh cilantro and mint leaves, chopped

For the Biryani:

  • 2 large onions, thinly sliced
  • 2 tablespoons ghee or vegetable oil
  • 1 tablespoon ginger-garlic paste
  • 1-2 green chilies, slit
  • 1 cup chopped tomatoes
  • 1 teaspoon biryani masala powder
  • A handful of cilantro and mint leaves (for garnishing)
  • Saffron strands soaked in 2 tablespoons warm milk (optional, for color and fragrance)
  • ½ cup fried onions (optional, for garnish)

Instructions:


Step 1: Prepare the Rice.

  1. Start by rinsing the basmati rice under cold water until the water runs clear. This removes excess starch, helping the rice to stay separate when cooked.
  2. Bring 4 cups of water to a boil in a large pot. Add bay leaves, cardamom pods, cloves, cinnamon stick, and cumin seeds.
  3. Add the rinsed rice and salt to the boiling water. Cook the rice until it’s about 70% done. The grains should still be firm.
  4. Drain the rice and set it aside.

Step 2: Marinate the Chicken (or Meat/Vegetables).

  1. In a large bowl, combine the chicken with yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala powder, coriander powder, lemon juice, and salt.

Step 3: Cook the Biryani Base.

  2. Drizzle the saffron milk over the rice for color and fragrance.
